After spending a bit of time in Sweden I developed a bit on an addiction for their Sil or pickled Herring. It got me thinking though - why don't we pickle more fish here?  After a bit of experimenting I found that ling pickles really well, I think it is because it is kind of sinewy. Anyway the recipe below is great with biscuits and cheese and is so easy to do.

Ingredients 1 carrot peeled and sliced 1 Red Onion Sliced 1 Decent fillet of Ling - say 400grams - cut into small pieces 3 Bay leaves 1 Decent chunk of lemon zest 1 Cup of water 3/4 Cup of vinegar 2/3 Cup of white sugar 1 Tablespoon of black peppercorns

Method 1. Dissolve the sugar in the water and vinegar and allow to cool. Taste it as you go to get the quantities right - i tend to add a bit more vinegar if it tastes a bit sweet. 2. Put everything into a jar - make sure the carrot, onion and fish is dispersed in the jar. 3. Put in the fridge - will be ready to eat in an hour.

And that's it so simple and so good.
